I wouldn't recommend going through the hassle of getting an affidavit for the K1.

 

The only evidence you need is regarding meeting in person in the past 2 years; passport stamps, boarding passes and hotel bookings are more than enough. You can add some pictures if you feel like -a few printed on a single sheet of paper with date and location, would be enough-.

Only important to USCIS for Adjustment of Status from a K1

When we did AOS we only had a joint bank account that I set up about the 3rd day my fiance arrived for immigration purpose only and we had a small amount in it, and I put her name on the water and electric bill only, we had a marriage license and pics and related of a few trips we had taken, this was for her removal of conditions going from a 2 year to 10 year greencard, never had a interview for either card.

 

We got a RFE and it asked for witness statements, I always thought witness statements were waste of time, she sent in 3 couples witness statements and some more travel related stuff from trips to Mexico, Dominican Republic, and Las Vegas and boom she was approved.

"Wrong again"?  So you're saying affidavits are required?  Please post the link.  

 

For other readers:  affidavits are NOT a requirement, is not considered good evidence, and most people do not submit them.  The information they contain cannot be verified by the CO; friends and family would be expected to write whatever you want them to write.

 

Obviously you got that RFE because your primary evidence was inadequate.  A well-prepared, complete application does not need affidavits.

What are you needing witnesses for? Proof of meeting? Do you have passport stamps, plane tickets, hotel receipts, etc.? Proof that you actually traveled to another country to meet is the important evidence for proof of meeting. You provide that type of evidence and you shouldn't need any witness statements.
