No pattern that I've aware of. They do release slots in a batch, but when in terms of time of month or time of day can really vary. There are cancellations that come up sporadically. The embassy advises that you keep checking regularly and you'll eventually find something. I tend to agree with that advice

2 days ago,  there were slots available for 8th of October. As others have stated, keep checking.....................!

These are the steps (order of booking an interview) posted in the K1 instructions on the London embassy’s website.

  • Select “I have received a letter from the consular section with instructions to register or schedule a K visa appointment”;
  • Follow the onscreen instructions to register an account;
    • If you have children applying under your case number, you may “add” applicants to your account after you have added your own details.
  • You will be asked to select your delivery method for the return of your passport if your visa application is successful. Delivery to a courier depot is free. If you wish to upgrade to home/office delivery you can pay an additional fee through your account;
  • Pay the MRV application fee;
  • You will then be offered the first available interview date, but you may choose any available date. Note: You may schedule an appointment to take place after the petition expiration date, provided that you bring to your interview a signed letter from your petitioner confirming that you both remain legally free to marry and that you will marry within 90 days of your arrival in the United States.
  • Please go to “Print Instructions” in order to print your courier confirmation page. You must bring this with you on the day of the visa interview.

I am at the stage in these bullet points where it simply says "Pay the MRV application fee". However, rather than take me to a page where I input payment details, it takes me to a page that gives the amount I should pay, along with a notice stating "no appointments available". I assume, therefore, that this payment will not be taken until an appointment becomes available. Is this correct or should I be able to pay the MRV fee regardless of the availability of appointments?

Wait until an appointment is available. You should then be able to make the payment.
