Port of Entry Interview Dates/Times

We have our Interview at the Embassy scheduled for September and I plan on going down there a few weeks later to help her say goodbye to everyone. I know there are certain airports that we can only fly into (Miami, Atlanta, Newark, etc). But can we fly in any day of the week, or just Mon - Friday? Are Interview times restricted? I don't want to book a flight home to Ohio from the Port of Entry and then find out we can't interview until the next day at 9am

Who said that?

K-1 visa holders can enter at any POE.

In reference to the entry ports, I saw that on a document or website about a month ago. I remember seeing that and thinking that we were lucky because those are the typical airports we use any way

I have never heard this.  Could you please post the link?

Any international airport is prepared to process a K visa.  We came across a land border from Canada, and even though the officer assigned to our case had never processed a K-1, he was able to, in under an hour.

I just remembered today that the assigned airports were just for bringing her dog into the Country.

Yes, the POE restriction will apply to intending immigrants importing dogs, regardless of their visa category -- https://www.cdc.gov/importation/bringing-an-animal-into-the-united-states/apply-dog-import-permit.html#approved-ports
