The letter with the interview appointment had such a long list of documents to take! It includes:

the I-485 and all supporting evidence (if not already submitted)"

I did already submit the complete I-485, and it's billion documents, obviously, or I wouldn't have gotten to the interview stage at all. I have a copy of the packet digitally, but should I print it all out again and do I need to assemble all the originals to take as well? The letter doesn't mention and technically it is already submitted.

It also details the I-864. I submitted sponsors - do I now need to update the evidence to be the last two pay stubs and latest tax return etc?

It feels like I already sent everything they could possibly need, but the letter makes me feel like I'm starting over. Any advice?

Do bring originals of the important documents. But everything else that was already submitted don't bring.
