Hi,

I'm a tad confused. I have lived in the US for 10 years in total starting 2006 (including 4-5 yrs in f-1,student visa). Does that suffice?

Yes. You just need to prove 5 years of physical presence, in any capacity (2 of which after age 14, but sounds like that is easily met).

Another question on topic. So I checked the processing times for I130. What happens after I130 is approved? When do I send in proof of income and tax documents? How many years of tax documents will they ask for? This is the only year I've made good money (I'll have made about 40k by the end of the year) as I was in school until 2020.

After filing the I-130 you wait until the case is at the NVC to do the financials.

18 months, 2 years, you should have plenty of evidence of finacials.

Yes, for a family of 3, the 125% of the poverty line is $27,450 (more in Alaska and Hawaii but less than $40k).

Contradictions without citations only make you look dumb.

does it really take 2 years for them to approve I-130? How long will it take once it gets sent to NVC

No.  Time to study the guide.  Just click on the word Guides at the top of any page here and study the one applicable to you.

There's petition processing time, time to deal with NVC, and then time in the queue for the visa interview.  I think Boiler was thinking you would be working 18 months to 2 years before the interview, but the process could take that long too, depending on the interview queue and what happens between now and then.
