Help - self sponsor - change affidavit

Hello,

My wife and I need your help. we have an interview at the Paris embassy on December1st, the original date of interview was on March 1st but since my wife got pregnant, we asked to postpone until the baby was born.

We applied for the IR1 visa using my sister in law as the co sponsor. So basically during the interview on December 1st we will need to come with the original affidavit of support document.

We learned that we could self sponsor, so we won't use my sister in law as the affidavit of support.

Can we change the affidavit of support for the interview on December 1 st ?

Can we change from being sponsored by someone to self sponsoring ? We have assets that are at least 5 times the poverty guidelines, and we could technically convert this money within a year so we qualify for self sponsoring

Can we repostpone the interview again ?

How long can  uscis keep our case ?

How long can the embassy keep our case ?

Between the baby, the covid, and the immunization for our baby, it would be wise to postpone to next year, but how can we do that without replying for the visa ?

Thank you very  much for your help, our situation is very particular so if you have more question, don't hesitate

Not sure what you mean by technically....  To qualify based on assets you need to be able to easily convert the assets without financial harm to the sponsor.  Totality of circumstances will be considered.  Yes, you can postpone a second time, and "technically" there is no time limit except the validity of the visa once it is issued.  I would contact the Consular IV unit in Paris directly with your question though.
