I am preparing my I129 applications My fiance and I have been living in Madrid for the past 2 years and I am moving back to the US in 2 days (I am a US citizen). We have the following documents as proof:

1. My enrollment certificate in the masters

2. His enrollment certificate in the PhD.

3. Rent Contract of my apartment for the two years.

4. Rent contract for his apartment only the first year because he lived with me in the second although we don’t have proof as the contract was only under my name. I will submit pictures of my bank statement showing he is transfering half the rent to me.

5. Some pictures of us in various places in Spain and with friends. I will only submit 4-6 although we have so many of course.

6. Entey stamps to Spain from my passport and his

Are these enough proofs? Should I be submitting more proof like airplane tickets to Madeid, more pictures, watsapp conversations from when we first met or it will not be helpful?

Have you read the actual requirements?  To submit the I-129f, you don't need all that stuff on your list.  @payxibka

In summary, it took 13 months for approval of the CR-1.  It took 44 months for approval of the I-751.  It took 4 months for approval of the N-400.   It took 172 days from N-400 application to Oath Ceremony.   It took 6 weeks for Passport, then 7 additional weeks for return of wife's Naturalization Certificate..

Way more than what you need.  Pictures and WhatsApp conversations do NOT prove face to face meeting within the prior two years.

YMMV
