If one files an AOS without two documents, along with a letter indicating the two docs will be forwards upon receipt most likely nothing will happen except maybe a request for ADDITIONAL  information.

Depends on what documents are missing.  If those missing are primary requirements (eg. marriage certificate, I-864), there's a good chance the package will be rejected, and any explanation letter will be ignored or disregarded.

Once the AOS is filed your safe

Not necessarily.  If the AOS applicant ever gets in a sticky situation with law enforcement, they must have actual proof on hand that they are authorized to stay in the US.  Before getting EAD, the only acceptable proof I know of is passport + I-485 receipt notice.  So until the OP gets that receipt notice, I recommend keeping a low profile.

Unfortunately my mother in law talks a lot and she had mentioned I was busy getting paperwork together.

So was mine - very frustrating. I had to ask her several times to please not discuss my case to anyone.

Hi everyone, I have a question , my husband and I just submitted my I-130 online on Friday and will get the AOS mailed by the end of July , last night we had a bit of a run in a neighbor who has threatend to call ICE on , we're now really worried about what will happen if they show up at my house or at the place I do volunteer work as she knows where it is. What happens if ICE show up? Really concerned.😥

I don't know what your situation is , on what grounds would she call ICE for you.  Your immigration status stays private till your through.

Hey, if you know your onions very well, you should have offered your neighbor a transport fare to go call ICE. He or she is simply jealous of what u may not even know about. If I were you, I would make a mess, jess and mockery of the idiot. Have no fear, your real evidence is the PAPER WORK you are doing. Do it when convenient to u and do not rush your paper work cos of that beast. Good luck.

And what would be the gain?

Not quite. Just doing the paperwork is not going to help. What helps in this case is sending everything, and getting the NOAs. NOAs are “real evidence” of authorized stay.
