My husbands ead/ap card just expired in may and his renewal papers are currently pending. I called uscis contact center to try and get an expedite with a job offer and they said it's not possible because ead is automatically extended 180 days and we would have to wait until those 180 days passed to request an expedite. Were we given the wrong information?

No, you were told correctly.   The NOA1 for the renewal is an automatic extension

When was the recent Form I-765 and Form I-131 filed? Allowing an expedite request is at their sole discretion.

We filed a month before the expiration.

Since it was filed before the expiration, your husband's EAD is automatically extended for 180 days. So there is no valid reason to expedite since the current card accompanied with renewal notice is likely valid till October.
