Will my case be denied if the affidavit of support doesn't meet the requirements even with a sponsor?

Do they allow you to submit another affidavit of support? 

Lastly, can you give an estimate of your old incomes but the most recent year be accurate?

Your case will not even reach the embassy/consulate if your joint sponsor does not meet the minimum income/asset level to qualify for sponsorship.

You may replace the I-864 with one from a new joint sponsor through the CEAC portal.

Report of income from past years must be copied from tax filings.  Current income is calculated from a recent pay stub for those who are employed by a company.
