Looking for some advice on leaving the country while going through the spouse visa process. Would this be allowed? I'm here in the US and my spouse in Nigeria. Would I be able to leave the United States and live abroad while going through the spouse visa process? Nigeria's wait time is currently YEARS and my spouse and I don't want to be apart anymore. We don't want to stay in Nigeria but I'll go anywhere to be able to wake up next to him every single day.

you can live anywhere you want

BUT you need to keep a US residency

file tax returns as required

have a joint sponsor ready to assist if your income is inadequate

be ready with a US income when you return (and i believe you have to return before him)

Issues are the following

if there is a RFE issued and you need to submit evidence ,  sometimes it hard to get it from another country (like i had to submit affddivit from my mother sayin i told her i would marry)

keeping a US residency may be expensive unless you use a relative's

and many have tired to do this and find out its hard to live out of the US (various reasons like its too hot, etc)

Profile says k1.  Spouse visa is not k1

YMMV

Petitioner may live overseas during the process.  That is what we did.  You will need to show proof that you have or intend to reestablish domicile with or prior to your spouse moving to the US.  Note that problems can arise from not living in the US regarding sponsorship unless you have sufficient assets or a joint sponsor.

I have a joint sponsor. I work remotely for an American company. And did get permission to continue working for them while abroad. I'm just not sure if they will let me do it for years. Would that count for anything?

It does not count against you.  You can live anywhere for as long as you want.  Just your spouse can not get a visa until you are ready to re establish your domicile.
