I am currently working on my AOS. My tax shows 2018: $43,000, 2019:$47,000, and 2020:$42,000. My employer made a mistake on my 2020 salary and is currently trying to fix it. My 2020 should've been $48,000. Will there be an issue with my 2020 tax showing a lower salary than 2019? I have a copy of a signed contract with my employer showing I should be paid $48,000.

Why would there be a problem?  Historical earnings are a data point but not the threshold.  Current income is the key.

Should I even submit my contract showing $48000?

It's up to you.  The contract can serve as proof of your current income.  Or you could submit an employment letter stating your annual salary or a recent pay stub instead.
