He is not currently earning any "wages" so his monthly retirement income times 12 is his current income.

It's fine but you'll need to upload the 2021 before the interview, for you and your joint sponsor.

Thank you, sir! You've been a great help to me and my family. All the best to you and yours!

Be certain to include declaration letter(s) from any retirement income streams.  That will be your evidence of current income.  Tax returns are about the past.

Understood.

Is there any best practices as far as that goes?

One most current declaration letter per income stream.

So my dad got this already. Looks like I have everything on his end.

A question about my I-864. In 2020, all of my income was foreign based. I did NOT claim the foreign income inclusion. My income was still $0 after exemptions and deductions and whatnot. As you know, I am not using my income to sponsor my wife.

As of now, I am at a dead end in terms of getting a tax transcript so I will submit a copy of my return.

Question: Because all of my income was foreign based, I have no W2s. How do I minimize the risk of NVC sending me a checklist asking for W2s? Is there something else I can submit to explain the situation to avoid a checklist?

Yes, submit a one page typed or hand written note atop the tax return copy that says, "All income is foreign, so no W2 or 1099 forms exist."
