We filed I-130 Nov 2019, approved May 2020 but I doubt that has anything to do with our interview date, but who knows?

No, PD doesn't matter for CR1/IR1 cases because a visa number is always available for Immediate Relative visa categories.  It is DQ date that matters in the wait time for interview.

CR/IR do not have priority dates. Visas are always available for those categories.
