Technically, the I485 is responsibility of the person attempting to adjust status.

The petitioner, you have to fill out the I130, and the intending immigrant has to fill out the I485, but you also have to include an I864.

Correct, as long as you get the I130 and I485 submitted, the B2 overstay does not require any additional documents.  The NOA, once received, provides for authorized stay until the AOS is adjudicated.

Optionally, applicant can file I-131, Application for Travel Document, if they want to travel whiles the application is being processed.
Optionally, applicant can file I-765, Application for Employment Authorization, if they want to work whiles the application is being processed.

No.  The I-539 application to extend non-immigrant status would not apply because the AOS applicant obviously does not intend to remain a non-immigrant.
