My DQ is January 7th, 2021 so I have a long wait ahead.

Hello, I was DQ'd in March 2020. Still waiting for the interview in Buenos Aires.

EB3 visa.

Anyone knows if the consulate is scheduling employment based interviews?

I have no idea. But you can check in the monthly visa issuance

Based on the Immigrant Visa Priorization (https://travel.state.gov/content/travel/en/News/visas-news/immigrant-visa-prioritization.html), EB visas are Tier 4. They statement regarding this tier is: ... " the prioritization plan also instructs posts to schedule and adjudicate some cases in Tier Three and Tier Four each month.  The Department recognizes that visa applicants, particularly those in Tiers Three and Four, will face continued delays". So, YES, they are processing, however in a much lower pace.
