Has anyone ever seen a case where a co-sponsor was rejected because they were retired/old? We have my in-laws who are willing to be co-sponsors, if needed. However, they are retired and 67 years old, with ~$60k USD annual income (only one immigrant to be sponsored, so they are comfortably over ~$28k USD 125% of poverty guideline requirement. They also have $200k USD in liquid assets). I am sure I wouldn't need a co-sponsor, but if things change by the time of my interview, I wanna make sure that my in-laws' i-864 would not be rejected because they are retired/old.

Sponsor / co-sponsor income  minimums are necessary minimums to reach but no always sufficient.  USCIS and/or the State Department will determine sufficiency.  There is no way to predict with certainty.

I'm aware that CO will have discretion but I am curious if there is a precedent for a co-sponsor with adequate income being rejected due to retirement/age? Have you seen any such case? Thanks!

I don't see a problem in your case.  "Elderly" joint sponsors can be a problem, but in this case, "elderly" is at least a decade into the 67 year old's future.

In my opinion, yes.  It's a judgment call.  I would use 75 as an age to start considering other options, if available.  There was a recent thread discussing using a 90 year old grandmother.  That's NOT likely to work.
