The requirements for a joint sponsor are exactly same as for the primary sponsor.  The joint sponsor submits a complete I-864 for himself/herself.  A household includes the sponsor/joint sponsor's household plus the immigrant.

In summary, it took 13 months for approval of the CR-1.  It took 44 months for approval of the I-751.  It took 4 months for approval of the N-400.   It took 172 days from N-400 application to Oath Ceremony.   It took 6 weeks for Passport, then 7 additional weeks for return of wife's Naturalization Certificate..

Already well answered but it really looks to me like you haven't read those instructions yet.  Doing so, is critical to your ultimate success and avoiding delays.  The joint sponsor's household is whatever it is PLUS the intending immigrant.  How to determine household size is clearly explained in those instructions.

 

Also note the instruction not to count anybody twice.  You'll see THAT instruction directly in the applicable section of the affidavit itself.

May I just add. If we submit our documents with the I864 and our tax return, (as that is currently all the NVC are allowing us to upload to the CEAC page) Will our application be processed through the NVC and then we are required to bring any additional documentation to the interview stage? 
 

we see the option to add the joint sponsor on the NVC but are currently away from the US and are both in the U.K.  Will it hurt us to take the joint sponsor application to the interview and submit our NVC documentation without it with hopes that we get processed quicker

It depends on whether NVC requires you to submit joint sponsor documents prior to "documentarily qualifying" you.  Sometimes, they require joint sponsor documents at NVC before assigning your case as qualified.  Sometimes, they just say you might not be qualified, but they leave it up to the consulate officer.  Once they "document qualify" your case, then you will enter the queue for an interview.  It certainly doesn't hurt to carry joint sponsor documents with you to the interview if you think you might need them since the consulate officer is the sole approval authority.
