I am wondering if the affidavit of support must be physically mailed to the beneficiary for their interview or can they simply print it out?

It can be printed.

Why do they say to bring all the originals to the interview for an immigrant visa, then?

Originals of what?  Civil documents, like birth certificates?

Do it the way you're comfortable with.  In our case, my fiance took scanned documents with him to his interview, and there were no issues.

Who said that?

The interview checklist from the US embassy in my country says to bring originals of the beneficiary's civil documents and copies of the petitioner's documents (including the Affidavit of Support).

Best to check with the interviewing embassy to find out what they actually require.
