Hello community:

My guy and I filed and received NOA1 July 29, 2020, we received our approval, NOA2 March 1, 2021. The NOA2 said that the "above petition has been approved and forwarded to the listed consultate".

So, I am wondering if the NVC (National Visa Center) has been bypassed?  Does anyone know anything about this?  I will email the consulate, but was curious if anyone knew more clearly about this.

For K-1s, the NVC doesn't process anything.   It just batches out approved petitions to worldwide consulates.  You can check it's actual location on CEAC.
