My K-1 Application was received May 08, 2020 at the Texas processesing building. I then received a Notice of Action on January 13, 2021 and the letter said that if I did not hear back from them within 30 days to contact them. I sent them a message via their contact form page 2 weeks ago and still haven't heard back. The letter also says the approval notice is only valid until May 12, 2021. What is next? Where else can I contact someone?

NVC.  They are way backed up so relax a little, your petition isn't going anywhere for quite a while

Thanks, I will continue to wait. The only thing that worried me was the expiration date they gave me on the last letter, but I'll keep waiting.

Everyone since March 2020 has this concern

YMMV

At the interview the CO can extend it: https://fam.state.gov/fam/09FAM/09FAM050207.html "the consular officer may revalidate the petition any number of times for additional periods of four months from the date of revalidation, provided the officer concludes that the petitioner and the beneficiary remain legally free to marry and continue to intend to marry each other within 90 days after the beneficiary's admission into the United States."

The next step will be your petition getting forwarded to the nvc for processing. They will then forward it to the embassy in the beneficiarys country of residence for further processing, and the beneficiary will be contacted about what further documents to send in. The interview will be the last step after all necessary documents have been reviewed and deemed sufficient etc.

Here on visajourney you can find an excellent guide that walks you through all the steps of the filing process. I believe you can find it in a pinned post at the top of this thread. Just keep in mind that any processing times given in it are not up to date anymore, every step seems to be taking a very long time at the moment.

What country and/ or embassy

makes a big difference as to how fast things happen

meanwhile do 2020 taxes as you may need those IRS transcripts for an interview after April 15th

So, from my understanding. The next step would be the interview, and if all goes well she's then able to travel to me, and then we have 90 days to get married. Is this mostly correct?

In general, yes.  But many embassies have a one-year backup of petitions just waiting at NVC, so you may be at the back of that queue.
