I got a USPS notification that my K-1 visa application was delivered to the USCIS direct filling address in Lewisville, Texas on January 29, 2021. As of today, the check has still not been cashed and I have not received a NOA1. Should I be considered? Is there anything I should do or should I just keep on waiting? Thanks so much!

The lockbox does not accept visa applications.  You sent an I-129f petition.  Correct terminology is important in the immigration process.

I've been noticing a trend.  As long as you didn't receive a notification within a week of filing, you are all set and in line like the rest of us.  Hop over to the January filers and don't forget to fill out your own timeline.
