I have an interview soon, but according to March 2021 F2B final action date visa bulletin, my priority date isn't current yet. To my knowledge, an approval can be made only when your priority date is current based on the final action date and your file is on hold if its not.

If you have had such experience, could you share them with me? I am F1 student so I can keep doing my school stuff while waiting, but my main concern is that my AP and EAD haven't been approved yet (biometics done in early January), and there is a chance that I have to visit another country for a conference later this year. Also, I did my I-693 earlier this month, so I am wondering if I have to redo it...

I mean, why schedule an interview when they can't even approve you yet?

If you are doing adjustment of status on a family based petition, the dates in chart B are what are relevant to you. See the note above the table “Visit www.uscis.gov/visabulletininfo for information on whether USCIS has determined that this chart can be used (in lieu of the chart in paragraph 4.A.) this month for filing applications for adjustment of status with USCIS.”   (If you follow that link it says For all the other family-sponsored preference categories [other than F2A which is curdent], you must use the Dates for Filing chart in the Department of State Visa Bulletin for February 2021. )

So, is your date current on that table? For most countries for F2B this is 22 May 2016, for February.

My PD is Aug 7 2015,  so yes it's current according to the chart B. Yes I applied for AOS back in June 2020. Finished biometric last January, scheduled interview in less than three weeks.

So, for AOS applicants, the chart A doesn't matter unless specifically stated otherwise by USCIS?

Yes. The link specifies whether chart A or B is applicable to AOS. For family based cases it is almost always chart B. (I am not sure if this will be affected when the ban on issuing these visas abroad gets lifted, but that wouldn't impact you anyway as you are already scheduled).
