I've already had my interview. The only thing stopping my visa is my husband's income from previous years wasn't enough. The embassy said we can get a cosponsor but nobody we've asked will cosponsor me. He recently started a new job that will pay enough to meet the requirements. Will the embassy accept a letter from the HR department at his new job that shows he will meet the income requirements or are we out of luck without a cosponsor?

Yes it might be minimum of the requirements

If your husband's new income is only slightly above the minimum requirement, then the consul officer probably decided that it is not enough to address the financial sponsorship concerns with your case.  I highly recommend you look again for a well-qualified joint sponsor.  If there's really no one willing to sponsor you, your husband could try getting a second job to supplement his income.

If the consul officer still asks for a joint sponsor despite your husband having current income (including income from a second job) above the minimum requirement, then you need to find a well-qualified joint sponsor or you will not be getting the visa.
