So our interview is next week for the  k1 visa. Is it okay if i submit 2020 tax return and use it on the I134? I  did manage to print my tax return & have my w2 for 2029, but its still pending  since they are still not processing them until feb 14 . Or should i use 2019?

We used 2019 as 2020 wasn't available yet.

Don't use anything that hasn't actually been filed yet (for all USCIS knows, what you actually file could be completely different); it's okay to use 2019 tax year returns or transcripts until the filing deadline for 2020.

If your income changed significantly between the 2019 and 2020 tax years, you'll want to also attach documentation of your current income.
