Hi there, we really don’t know what to do, so if someone has some experience please help us out!

my father in law was really sick so we could expedite their I-130, but sadly he couldn’t make it... now my mother in law it’s alone and my husband is heartbroken, how can we bring her to US? She only has the I-130 approval notice. I couldn’t find any similar cases of people who got parole with only I-130 approved to come to US not to leave...

You don't get parole with an i130.  Her petition is approved,  she needs her visa interview.

YMMV

i130 dosent approve her to come, it just says she has met the requirements as a beneficiary... since the i130 has been approved, it’s been sent to NVC... Submit her visa application with NVC once you’ve done that you can request expidite... nothing else you can do if you haven’t made application for her visa at NVC

Sorry, your MIL will not qualify for emergency parole.

Presuming that her US citizen son file an I-130 for her which is no approved, she needs to wait for the NVC for normal processing.  She will need to file a DS-260, wait for the IR5 ban to end on March 31, 2021, and wait for an available visa interview.  This will probably take a year since her category has been banned for almost a year.

There is no way to speed this up.
