My wife’s I-751 application can be submitted from 2/28, however we are out of the country from 1/30 - 5/1.

 

I plan on having a family member send the completed application on 2/28, but I was wondering if it’s OK not to include the January utilities and bank account statements as I won’t be around to print / add them to the application (it would be difficult to have a family member do this for us in my opinion)? I am including at least 3-4 months of random statements for each year plus the most recent nov and dec bills.

You should be fine.  If you end up having an interview, you can always add more evidence.

You will need to make sure you can receive the receipt notice that has your extension. If you are out of the USA with your expired green card and can not get the extension notice in hand you will have problems returning. 

 

If you can't get the extension letter in hands of the conditional green card holder they will need to return to USA and get a i551 stamp in their passport before the CGC expires.  

 

Also don't be out of the USA for more than180 days at a time.

Thanks! I’m providing a ton of evidence in the hopes we don’t get called in for the interview, but if we do easy to print off newer statements...

2/28 is the first day we can file and we are only out of the US for ~70 days (Mexico trip) and back well before her green card expires :-) Do we need to request an extension letter / stamp or is that automatic as part of the i751 application process? (We do have some travel in July, which is after the green card expires). Thanks!

The extension letter is automatic and is a part of the notice of action an i751 applicant receives from USCIS indicating receipt of your i751 application. 

 

Note, there are large backlogs at the USCIS lockboxes for last several months with i751 not even being open and notices being sent up to 2 months after the i751 were received. You may not know if your i751 application was accepted until weeks and weeks after filing.

Looks like you will be back in USA before you current CGC expires on 05/29/2021,  so if that is the case you should not have any issues even without the extension letter in hand.
