Quick Question Regarding Fee Payment.

Well, sort of:

In the last year  we've moved to a new location and mainly because I never write checks these days, I forgot to order new checks with my new address.   I know my old  checks can still be used generally speaking but do you think there is any reason why USCIS might object to the old address?

Would it be better to go with a money order?  I use USAA so there are no physical locations for me to go get a cashier's check...

I'm sure there's no 'right' answer, just wondering if anyone has any thoughts.

You do know you can cross out the address (in upper left hand corner) and write in small print the new one

If there is an address on your checks that's wrong, simply cross it out. ... In the US, pre-printing addresses on your checks is mostly a convenience. You can ask the bank not to do it, and the checks will get cashed all the same. If there is an address on your checks that's wrong, simply cross it out.

if money is in the account and the check is good,  that's all immigration cares about

I have used my check which has my previous address on it while submitting my application. And USCIS has no problem cashing it. So I believe as long as your name is on it and you have the correct amount of money written on it, you are good.
