so we got approved and things are starting for us at the NVC.

When should I start with further steps, such as doing my medical and ordering the police certificate? How long are these good for again?

Im not sure if each country is different on these times, I'd check with your embassy there. But IVe read that Medical is only good one year and remember, if Im not mistaken you need it also for the AOS. The police certificate is good for 90 days. I'd wait till the packet 3 is recieved with the direct directions from your embassy.
