The part that confuses me in this thread is that you have PTO. Why not use PTO to cover the gap? 

 

Anyway, some if not most jobs are purely hourly, and pay only for hours worked. This isn't unusual. I would include a statement with the paystub stating that you are under a mandatory quarantine and except to resume earning pay in the following pay period.

Any deficiency's that are uncovered at the interview will at that time be addressed. The statement will have no value. The CO derives the information that they require to determine a public charge is based on those items in the P3 which I have laid out in an earlier post in this thread.

 

Future income cannot be used to support her/him now. Neither can past income. They [embassy] will care about current income first. At the time you present the I-134, it needs to show the petitioner's current income...that is how much they are earning at that time. The past income may be considered for the public charge piece as well, but current income is what is required.

 

It may be wise for the OP to seek a co-sponsor for now. Then if the petitioner does land a job paying better by the time AOS comes around, they can qualify on their own. The I-134 is not binding, and they do not need to use the same sponsor (or any other sponsor at all) for AOS after marriage.

 

They are not tax consultants at the embassy, so they will only look at line 22 of the 1040 for GROSS income.

The UK embassy only ask for the I-134, Affidavit of Support but other embassies ask for much more than that. That is why the OP has been advised as to her embassy's requirements via links to documents that substantiates what the requirements are. In her case she received the email that a Tax Transcript and the I-134, Affidavit of Support is required.

I was trying to save my PTO for when he gets here and when we get married.

thankfully I'm still employed. I'm awaiting results and will return to work if negative :)

Well you have a dilemma then.  It’s a priority call.  Given what @Greenbaum is asserting, it is in your interest to ensure the CO believes your are maintaining income.  
 

And I fail to see difference between taking unpaid time office (UTO) now and PTO later versus PTO now and UTO later.  The number or hours worked is the same.  The number of days off is the same.  The number of dollars earned is the same.

There is your answer.   No paystubs required if your 2019 return shows sufficient income
