Change name after AOS is filed

Timeline

I filed the I-485 (I-130 already approved) with my wife's maiden name.  I thought it would be better to have her green card match her Chinese passport since she will (hopefully) be travelling to China yearly.  Now I have changed my mind and want the green card to be her married name.  We applied for SS number in her married name and the guy said he would send it in as we wish  but it will take more processing since her EAD is in her maiden name.  He made a certified copy of the marriage certificate.  He said we need to notify USCIS that we want the green card to be in her married name now.  I was going to do that at the interview, but would it be better to send a letter now asking for the name to be her married name?  How would I do this, send a letter to Lee's Summit?  Thanks
