There is no requirement to show 'evidence of ongoing relationship,' so text chats are not useful.  Most photos do not reflect a date.  Itineraries don't mean travel occurred.  Passport stamps and actual boarding passes are the most readily accepted evidence by USCIS, historically.

I've read that it's good to show an ongoing relationship in the I-129f packet because it can make the rest of the process easier for you (like the interview) to show that your relationship is legit from the beginning, you would say this is incorrect?

Consulate specific.   If it was a high fraud country such as Nigeria then that is a different story

It can be very consulate-specific.  "Front loading" is critical for Nigeria, for example.  Not even slightly necessary for New Zealand.  My fiance did take the 'ongoing relationship' stuff along to his interview in Auckland, but it was not requested.  We didn't send any snapshots or extraneous stuff with the petition.  We followed the USCIS instructions and were approved with no RFE.

 

Hopefully other K-1s who have gone through Mexico can speak specifically to this.

Keep your evidence of meeting within the past 2 years concise.  Make it easy for the USCIS agent to review what you submitted and check off that you met the requirement.  Going through various photos and finding the boarding passes and/or passport stamps at page 11 of a 30 page submittal (for example) makes it harder for them.

 

A summary of the meeting, with the boarding passes/stamps, a hotel receipt and a couple of photos of the two of you at that location is all that is needed and simpler for USCIS to process.

 

You have not mentioned the other items you need:

 - Proof of citizenship of the petitioner (bio page of your passport, birth certificate, etc.)

 - A description of how you met

 - Signed letters of intent that the two of you will marry within 90 days of your fiance arriving in the US.

No one is going to want to look at a 100 pages of text messages or pages of photos.  If you feel you need more proof at the consulate stage, make more visits and accompany your fiance to Ciudad Juarez for the interview.  You can't go in but she can take your passport with her to show you are there supporting her.

When taking copies of stamps in out passports, we just make a photocopy of the page with the relevant stamp correct? Or do we also need to photocopy our identification pages?

Just the page with the relevant stamp and the bio page.   Make is easy on the adjudicator.

Is there any issue with sending passport stamps from an expired passport? My beneficiary recently got a new passport about six months ago.

 

So there are stamps in her new and older passport that I would like to use (I've been told we want to front load our application with more evidence a little bit because Mexico might be a place with more fraud, which is why I would like to show evidence of more trips together)

No issue - just include the matching bio pages.

 

Mexico isn't high fraud.   You have what you need to file for USCIS.  I would try to spend more time together always is better and since you can easily fly in/out and take that proof to the interview.
