Hello everyone. I have searched for the answer for my question and can’t seem to find it. I apologize if it is a repeat question. 
 

My fiancé and our son (1 y/o) will be traveling to America from Vietnam soon. What will happen at the airport in Hanoi as they leave? What will happen in America when they arrive?  What documents should we be sure to have?

Yes. He has both a US Passport and Vietnamese Passport. He also has Vietnamese Birth Certificate and CRBA. 

Passport is the travel document.   Keep tbe BCs safely packed away

Depart by showing both because there will be no visa in the VN passport giving permission to enter the USA
