Hello I am the USC petitioner and the beneficiary is awaiting her K1 visa interview.

She will be interviewing with the minor K2.

Now that we are still awaiting the interviews to start , is is advisable that I take advantage of this time and initiate K2 adoption process in my fiance's local country?

If the adoption is possible at all in her country, then is it any better to have it done before they both come to USA ?

Inter-country adoption will be a major undertaking, assuming you are even allowed to adopt the child.  Just wait until you and the mother are married in the US, then look into stepparent adoption in your state.

Adopting a child before you even married the mother is never a good idea. I don't even think  you can before marriage.
