Question about income requirement and joint sponsor

Hi everyone,

 
I had a question about the income requirements. We are currently applying to the embassy in Japan but may have to have it transferred to South Korea (fiance's home country) depending if he will return there in the coming months.
 
I only recently graduated university in the spring and have a prospective full time job lined up which should meet the requirements needed. If I had to provide a tax return, though,  it would not demonstrate a substantial annual income by the time we get to that stage as I will likely only have been working for about a half of a year or so. As my parents have a much more convincing income and are currently providing for me I wanted to use one of them as a cosponsor. 
 
Are there any issues with having a cosponsor in Japan or Korea? I've known and dated my fiance for 5 years and he also has substantial savings. Lastly, can both my parent and I fill out the I-134 form? If anyone has advice that would be wonderful!

Timeline

Current income is key.  Demonstrated by paystubs.  Historical (tax returns) is not the final determining factor.
