What do you guys think?

A cover letter is not required, it just helps the USCIS employee to organize your documents. So yours is fine, don't sweat it.

Nice.  No need to scramble for evidence now.  Still needs I-130A though.

Oh, sorry, I just saw I skipped some words on my reply, lol. No need for bona bide marriage evidence if AOSing from a K1 and the marriage happened within 90 days. Which seems to be the case here, I just don't want people adjusting from other visas to get confused.

Oh, that's why I got confused because you said before that the OP and spouse do need the evidence.  Because unfortunately, they did get married after the 90 days.

Anyway, now that's all cleared up... OP, did you include form I-130A and your evidence of bona fide marriage in the package?

We actually did get married after the 90 days. So I'm aware I need to include the I-130. Is there anything I need to submit with that form that's in relation to it (separate fee to USCIS, copies of birth certificates, etc)?

In this case, you'll also need evidence for the relationship.

For the bonafides I'm including our joint bank account and health insurance. We've only been married for a month so that's all we have for now. Would this do ?

As far as the I-130 section is concerned, I've included:

- Form I-130

- Form I-130A

- Petitioner and beneficiary passport

- K1 Visa

- Marriage Certificate

- Bonafides

- 2 passport photos of each

Is there anything else?

You should be fine assuming everything you submitted is in order.  As others have said, you will have a long wait ahead of you because the I-130 has to be adjudicated before the rest of the AOS applications.  So you have lots of time to gather more bona fide marriage evidence before the AOS interview sometime in 2021--IRS tax return or transcript for 2020, joint lease, mortgage, or deed, driver's licenses showing same address, joint credit card statements, will, living will, power of attorney, etc.  Good luck!
