Is the foreign partner currently in the US? If so, get married and file I 130 and I 485 concurrently. I'm not sure if you have to withdraw the K1 before you file but it would make sense.

If the foreign partner is not in the US and you plan an coming to the US to get married and file for AOS then that is Visa fraud and a no go.

 

Edit: sorry misread you weren't talking about AOS. Well you just can get married and then file for CR1. Probably withdraw the K1 before file.

Yes, there are others who have abandon the K1 for the CR-1 or even gone as far as getting a visa for the USC to live in their country. There are other threads that talk about this same question. You could look through some of the threads and you'll get some insight as to their individual plight's.

I came to the US in May with the intention of going back to Canada in August ('cause I still had a job, and stuff waiting for me to come back to).

While here, we realized our consulate was taking its time to not open and do interviews, so we decided to get married here, and file the I130 and I485. It's doable if you didn't have intent on doing it in the first place, but most people can't do it with their job/house/whatever back home. It's really up to you. 

The Adjustment of Status from Work, Student, & Tourist Visas Forum is the best place to go for this, there's many people in there that decided to do it that way. That's where I got all my info from.

Effective August 28, as it becomes safe to resume more consular operations at each U.S. mission, posts are authorized to give K visa cases high priority.  Applicants should check the website of their nearest U.S. Embassy or Consulate for updates on what services that post is currently able to offer. The I-129F Petition for Alien Fiancé(e) is typically valid for four months; however, consular officers may revalidate the I-129F petition in four month increments.  For most cases impacted by the suspension of routine visa services or COVID-19 travel restrictions it will not be necessary to file a new I-129F petition.
