I happen to notice when reviewing the Visa statistics at the link below that Manila has processed over 100 K1 visas in July alone.  Yet, I don’t see a single entry on this website that shows a visa interview date in July.  With that many, I would think at least one would be here to help validate.  If that is the case, why does the US Embassy website in Manila not indicate that they are processing K1 visas?  When other cities start to process K1 visas, will they start scheduling interviews secretly or will they announce similar to other visas?  Any ideas?

Manila isn't currently doing routine K-1 visas. The visas you saw issued are expedite/emergency. Compare those numbers to last year; in July 2019 668 K-1 visas were issued in Manila.

As already mentioned, the US Embassy in Manila is processing expedited cases, including K1 with medical exams that are expiring soon.  People have been providing updates over at the Philippines sub-forum about their recently completed K1 interviews.  Some requested for expedite, while others didn't but were contacted by the embassy for interview anyway when their medicals were about to expire.
