AFFIDAVIT letters

Affidavit for what? Usually, the point of an affidavit is that it is notarized, or whatever the equivalent in the home country is.

If it is a uscis affidavit of support you mean, you are signing it under penalty of perjury so it is not necessary to be notarized (as stated in the instructions for the form).

Both types can be used in visa applications so not sure which you mean.

I'm preparing the form to get the green card, I-485 and I-30, and USCIS requests AFFIDAVIT for third person that recommend our marriage.

You’re posting in the student visa section so that’s very confusing. 
But anyway if you need the kind of affidavit such as someone attesting to a relationship, yes it should be notarized.
