I am preparing to submit a marriage based AOS. I am currently on H1B visa. Here are details of my previous status:

2003-2009: F1 visa (Visa stamp in 2003)

2009-2010: OPT

2010-2013: H1B (no stamp in passport as did not travel outside USA)

2010: EB2 I140 approved. Since I am from India, priority date never became current, so never filed I485

2014-2016: H1B, after extension. H1B was stamped in 2014

2016-2019: H1B, after a second extension. H1B was stamped again in 2016.

2019-current: H1B, after a third extension. H1B was stamped again in 2019

Do I have to submit copies of all these visa, I797, I20, I140 etc. with my AOS documents? If yes, what form are all these documents relevant to?

I don't have a definitive answer for you, but in our "big I-485 super-package" we included scans of both my wife's I-20's and her OPT EAD card.

If I recall correctly, providing her OPT EAD was strictly asked for the work authorization part of the application (I-765), but we weren't completely sure if the I-20 was needed at all. We just included it anyways in the big pile of papers we mailed in just in case. I'd bet if they asked for her OPT EAD for the I-765, they'd definitely want a copy of at least your most recent H1-B visa too.
