Leftover meatloaf...definitely a good way to stay on one's diet. However, my adorable husband loves leftover meatloaf and makes a sandwich out of it. *feels faint at the thought*

mmm, leftover meatloaf sandwiches.... YUM! YUM!!! maybe it is a Canadian thing?? :lol:

leftover meatloaf is almost better then the first time around.. you have to have the right recipe though...

I understand why it'd be, just see my comment before yours. :P

I like fresh meatloaf 'cus it's juicer, after refrigerating it dries out.

you don't have the right recipe then :P:lol:

my leftover meatloaf is never dry... :no: maybe not as juicy as the first time around but it isn't dry :no:

I'm completely bored at work. We are getting new furniture delivered today so we had to pack up our offices. I haven't been able to do any work all day long. Normally that would be a good thing, but it's Friday. I would much rather have been at home or somewhere else. I could have used a 3 day weekend.

I'm completely bored at work. We are getting new furniture delivered today so we had to pack up our offices. I haven't been able to do any work all day long. Normally that would be a good thing, but it's Friday. I would much rather have been at home or somewhere else. I could have used a 3 day weekend.

I sympathise. Would you care for some meatloaf? Only slightly leftover and dry. (I also could use Marilyn's recipe.)

Whenever I ask my hubby what I should make for his Birthday or other special occasions he always asks for my meatloaf...

Oats and Meatloaf

1 to 1-1/2 pounds ground beef

1/3 cup quick oats or 1/4 cup bread crumbs

1/4 cup finely chopped onion

1 clove garlic, minced (optional)

1/4 cup finely chopped green pepper (optional)

1 or 2 eggs

1 tablespoon dried parsley

1/4 teaspoon oregano (optional)

1/2 teaspoon thyme (optional)

1/2 teaspoon salt

1/4 teaspoon pepper

1/3 cup ketchup

Mix all meatloaf ingredients together. Put in a loaf pan. Mix together 1 tablespoon brown sugar, 1/4 teaspoon dry mustard* and 3 tablespoons ketchup. Pour over loaf. Bake at 350 degrees for 45 minutes to an hour.

*you can use about a teaspoon of yellow mustard if you don't have dry mustard...

Weird, that's basic the same recipe I use, except I never use oats, just bread crumbs. I wonder if it's the oven time that messes up my meatloaf.

Oh, I read the glazing you do on top, I usually put strips of bacon and cover with tinfoil, then uncover when it's almost done to brown.

how long do you cook yours for??

the glaze is what makes the meatloaf :thumbs:

I cook mine for about 40 minutes, with the tinfoil on top it tends to cook faster.
