Dear USCIS,

All you need to do is put a stamp on the form, check for the signatures, and put the check in the bank. There is no reason this should be taking 23 days. Actually, there's no reason this part of the process needs to involve you at all. If I can buy pearls from Japan on eBay, and their computers can figure out the exchange rate, the shipping costs, and a secure way to do it, there's no reason at all that the I-485 can't be an online form with a little box for a paypal payment.

What's that, a frontlog, you say? Look, we all know that everyone and their mother, quite literally in some cases, would be trying to beat the fee increase. How come it didn't seem to occur to you?

Hugs and smoochies, and thanks for burning up the last 23 days on my husband's I-94. We really love being formally out-of-status because it just makes us feel so warm inside.

After working like crazy in VA I'm sure hubby will want to sleep a lot, so we'll probably stay home and I'll have to come up with something good to cook. *thinks*

If you guys like seafood i HIGHLY recommend this dish.. made it last night and it is YUMMERS..

Bigtime labour intensive.. but oohh so yummy!

ingredients

2 tablespoons olive oil

1 tablespoon drained capers, patted dry

2 1/2 cups dry white wine

7 whole peppercorns

3 shallots, thinly sliced

2 fresh thyme sprigs

1 bay leaf

1/4 cup whipping cream

10 tablespoons (1 1/4 sticks) butter, cut into pieces

5 leeks, chopped (white and pale green parts only; about 4 cups)

3/4 cup water

1/3 cup (packed) chopped fresh chives

1 pound sea scallops

1 tablespoon chopped fresh tarragon

preparation

Heat 1 tablespoon oil in heavy small skillet over medium heat. Add capers; sauté until crisp, about 1 minute. Using slotted spoon, transfer to paper towels to drain.

Boil wine and next 4 ingredients in small saucepan over medium heat until liquid is reduced to 3 tablespoons, about 15 minutes. Add cream; boil until liquid is reduced by half, about 2 minutes. (Capers and sauce can be made 2 hours ahead. Let stand at room temperature.)

Melt 2 tablespoons butter in heavy large skillet over medium heat. Add leeks and 3/4 cup water. Simmer until leeks are tender and almost all water evaporates, about 4 minutes. Mix in chives. Season with salt and pepper. Transfer leek mixture to platter. Tent with foil.

Sprinkle scallops with salt and pepper. Melt 2 tablespoons butter and 1 tablespoon oil in another heavy large skillet over medium heat. Add scallops; sauté until cooked, about 2 minutes per side. Arrange atop leeks. Tent with foil.

Reheat sauce over medium heat. Gradually add 6 tablespoons butter; whisk until smooth, about 1 minute (do not boil). Strain sauce into small bowl. Stir in capers and tarragon. Season with salt and pepper. Spoon over scallops.

Makes 4 servings.

I made Turkey Tacos with mango salsa last week.. they were sooooo yummy!!! :thumbs:

the salsa was soo good you could eat it with a spoon and nothing else .. yum yum....

MANGO SALSA

2 mangos, chopped (about 2 cups)

3/4 cup chopped red bell pepper

3 tablespoons finely chopped green onion

3 tablespoons finely chopped fresh cilantro

1 tablespoon brown sugar

1 teaspoon grated lime peel

In medium bowl stir together mango, red pepper, green onion, cilantro, brown sugar and lime peel.

* if you like a bit of heat you probably could add some chopped jalapeño ....

sounds good, but it's too gourmet for moi :P

I know that I won't be making pasta and definitely be making meat, and no steak. So I'm limited to either chicken, or ground beef or shrimp.

Hey ya'll! Long time no see. I've been preoccupied with a lot of stuff lately.

Nessa: I get my hubby back today too. He's only been gone for two days but next week he'll be gone all week. Unfortunately we are still trying to do some remodeling around the house so he probably won't get any rest this weekend.

Hubby has been working really hard the last few weeks. They have him working 10-12 hour days M-F. Poor guy has to be up at 4am :( Well we made plans for the weekend to relax and veg and catch up with each other as the past few weeks have been stressful and tiring. Stupid boss tells him THIS MORNING that they all have to work Saturday...all day...MANDATORY.

:protest: That is such BS! :protest:

You can't spring something like that on all your workers at the last minute. Especially when the job is specifically suppose to be "no weekends" and the company "prides themselves on perserving family time" and they have already been working massive overtime the last few weeks. BS!

Ugghhhh!!! It is so maddening!
