That sounds really healthy-you must have a ton of energy. I work at a catering company and they fix our lunch everyday-most of the time it's something crazy gourmet that I can't identify so I don't eat most days. Today it's fried chicken wings, polenta, eggplant parmesan, and caesar salad so I'm having some chicken wings and polenta. I find if I eat too much at lunch time (bc I'm not normally used to eating) it kills my energy.

I eat healthy during the week to compensate what I eat on weekends :P

I love chicken with polenta, we have back in my city - Curitiba - this area that has like 100 italian restaurants, lots of italian immigrants there, and it's a very common food chicken with polenta. It's been forever I don't eat polenta.

I think this polenta has cheese in it, but I'm not sure. I keep trying to eat it but the texture is getting to me. Is is supposed to be real gritty?

I don't know what I am having for lunch...it is still 3 hours away :( I am already hungry.

I have never tried polenta...what exactly is it?

Polenta...looks like mashed potatoes kinda but yellow because it's made of corn. Texture is gritty I bet similar to grits. Very rich.

Well you can make it thicker. I really can't explain. We eat in Brazil either fried (it looks like french fries, but it's fried polenta, like you prepare real thick and cut in pieces like french fries and deep fry.

Like this:

It's very good.

Then it can also be made by boiling not for long so it'll look like the texture of mashed potato.

Or you can boil longer so it'll get thicker.

something like this:

I like to prepare thicker, then you put half in a big bowl, and put some cheese in it, and then put the other half and then a home made tomato sauce and then more cheese. The cheese melts, it's delicious. And when you cut it has the texture of a pie. Now I feel like making some :P
