That's where photos are useful. There are other ways, but photos are good here. You don't have to have any single piece of evidence - submitting several items that prove different things is how most people do it - photos prove you've met, boarding passes etc prove you were in her country, anything that can show a date and that you were together is even better.

We took photos together in front of the Christmas tree in her city in December. The tree changes every year, so it is pretty easy to see that it was taken in 2019.
