Pretty big thread (80 pages and counting) but you'll see numerous accounts of people using Mexico here. It sounds like you'll generally want to keep any records that show you've been out of the area for 14 days like boarding passes and hotel receipts.

Hey I just come back from Norway seeing my son and my fiancee. I am a USA citizen but I was allowed to travel to see my family. Delta, SAS, and a few other airlines are flying everyday out of Copenhagen and Amsterdam to the USA. The prices are high, but they will fly you if you have the correct paperwork to enter the USA. Once inside the USA I had no trouble finding planes back to my city. Hope it helps

The difference is that you are a USC so you have no issues returning to the US. You cannot be denied entry. A K-1 fiancé visa holder from a Schengen country falls under the travel ban. The cost of the flight and availability of tickets is not the issue here. The issue is the EO banning non-citizens and non-residents from entering the country if they have been in a Schengen country at any point in the previous 14 days.
