So here is where I am at:

Long story short.....My wife and I were married 8/31/19 in Cairo (She is an Egyptian national).  Started dating around May of 2016.  Engaged in April of 2019.  Have lived together since September 2018.  We currently live and work in Beijing.

1.  Will receive translated marriage license in about 2-3 days (Proof of bonafide marriage)

2.  Chinese banks do not have joint accounts at all (commingling of funds..can"t use our Chinese accounts)

3.  I can't add her to my Chase Bank account or any of my credit cards as she doesn't have a SSN or ITIN.

4.  We bought an apartment in Egypt that is in her name and we are trying to add mine (was told originally I could not be on it) Proof of bonafide marriage that I hope is okay

5.  Our apartment lease with our names is in Chinese (would I need that translated to English) More proof

6.  I filed my taxes this year as married filing separately and wrote NRA where it asks for her SSN and have filed every year i have been gone

Is this enough to prove its legit?  We have thousands of pictures from trips and stamps in our passports, wedding photos, and our wedding video that we plan to include.

My mother is going to have her lawyer draw up a rental contract with her address as where we will live, which is true, temporary living arrangement, but true (its also where all my credit cards and bank info gets mailed) (this would be the domicile part) and my mom and dad will co-sponsor.

Am I missing anything?

You are not required to have joint bank accounts, don't stress that.

Don't bother, outside electronic media cannot be used on government computers.  The device you would put the video on will go straight into the trash.

Evidence (not proof) of time spent together in-person is your strongest evidence; since you and your spouse are living together along with other items you mentioned, you have plenty of this type of evidence to use in that regard.

One of your parents will act as a joint sponsor (joint sponsor is the proper term when referring to an I-864, not co-sponsor); the other parent would act as a household member of the joint sponsor.

Thanks for all the insight.  Just trying to be as prepared as I can.

I forgot to mention that my parents are divorced (20 years ago).  My mother is remarried.  So I thought because of that I could use both separately as joint sponsors.  I think we are allowed up to 2.

Nope, you are only allowed one joint sponsor.  For you specific case, that can only be one of your parents; if that happens to be your mother, then her current spouse can be a household member.

Her current spouse SHOULD act as household member if they file taxes jointly.

Last thing...I have lease that my mother drew up.  Can we put a post dated date of move in?  As i am overseas, can we have the lease commence in September 2021, have lease agreement dated July 6, then show proof of security, first, and last months rent being paid.

thanks again for all the help.

You have lease agreement for living in your mother's house, or in one of her rental properties.  No need for contrived evidence.  A simple note indicating you will be living with her at least temporarily when you arrive is sufficient.
