When I was in the US under F1 visa, I got a SSN through OPT. After that I moved back to my hometown. Now I’m back in the US under K1 Visa and we’re already got married and filed for AOS. I read online that SSN don’t expire so my question is do I need to apply for a new SSN or I can just use the current one that I have?

SSN is for life. No need to apply for a new one.

Use the current one you have, just have the card changed to reflect your new status. For sure your OPT SSN has the "Not valid without DHS Authorization" Stamp. Go to the SSA (after covid and after you got your gc) to get your unrestricted SSN and update status. This is from personal experience as I had an H4 SSN that i used for different visas like L1, H1B and eventually citizenship.

And when you do get citizenship,  you return to SS office to let them know status has changed  (and that is offically the last step in the whole process)

 Yes, after the green card she can get the SSN without the restrictions.

If you change your name, then you will need to change that with Social Security as well.

No need to apply for a new number since that number is yours forever.  You should update it though with your new legal name.
