I didn't include the DS-3025 vaccination report with my I-485 package, will this matter or should I be fine just bringing it with me for the interview in place of the I-693?

For your ds3025 to be valid for AOS it needed to be included as a part if your Visa medical package .  Most likely it was.  If you choose to bring your copy you can but it won't be needed.

Fantastic news! Thank you! I'll make sure to bring it with me for the interview anyway just to be safe.

It's such a relief knowing now that I don't have to go see a civil surgeon to get the I-693 filled out now! 😁

The i-693 is for medicals done within the US. So if your fiance is having the medical done outside of the US, s/he will never have anything to do with the i-693 (unless the foreign medical was incomplete for some reason, then s/he would have to complete it inside the US).
