I don't think the embassy cares about why he quit his job. It's only relevant that he doesn't have an income now, why this is is irrelevant for them. It's relevant to unemployment insurance, if he'd quit he doesn't qualify, so there's no point for him to apply for it anyway. Well, unless he was forced to quit or his work conditions were unsafe or there was harassment which doesn't seem to be the case here.

Trying to expedite the process without a sponsor who can provide is useless...because you wouldn’t be approved. You are more than welcome to request an expedite (with a sponsor who can support..) for the reasons you listed but don’t be surprised if it gets denied as others have stated basically everyone is in the same situation due to covid. I would be more concerned about The stability of your husbands mental health.

I think it’s strange your mother in law suggested someone outside the family to be a joint sponsor and didn’t offer her support... you are more than welcome to ask anyone to be a joint sponsor but you may find Someone with no familiar ties won’t want to sign a contract with the US government on your behalf especially given your husbands instability and inability to support you at the moment (I.e. more likely to become a public charge) nor may they want to share their tax returns and SSN with you, the embassy etc... just some things to think about.

Its also about his health! Not just that he wants me there but i am apparently the only one he listens to right now.

That is not something that US immigration can fix, nor is it within the scope for a hardship expedite.

If he is not coping, he needs to find local resources to help him.  I suggest starting with his primary care provider, hospital social workers.  Heck, even the Washington State coronavirus info website has mental health resource links.

Hi,

My husband quit his job friday a day after i asked him if he thinks we should try to expedite our Case which is still at The NVC.

Thanks

Don't know about his state, but in all the states I've been in, if you QUIT your job, you are not eligible for unemployment.  Only when you are laid off due to no fault of your own.  If one is fired for most activities, they are not eligible either.

Once the travel restrictions are lifted, he can travel to visit you.

Or OP can visit her husband in the US with ESTA; spouse of USC isn't subject to Schengen Area proclamation: https://www.federalregister.gov/documents/2020/03/16/2020-05578/suspension-of-entry-as-immigrants-and-nonimmigrants-of-certain-additional-persons-who-pose-a-risk-of Obviously, OP would still need to overcome 214(b) presumption at POE. Entry is at CBP Officer's discretion.

You can get unemployment if you get fired, too, unless you did something egregious. If it's just performance related, you qualify.
