Even if they were LPRs (or had a non-immigrant status), the joint sponsor wouldn't have to list them. They aren't responsible for the kids.

The only way he would have to list them is if they were dependent upon him financially (i.e. listed on his taxes), or if he was sponsoring them for a green card (although that would be on their own I-864s in this case anyway...not the mother's).

On the form I-864, I saw that a copy or transcript of federal income tax return for the most recent year is needed. Please are there additional documents my sponsor is required to submit alongside Form I-864?

I always recommend all 3 years of transcripts.   Look at the checklist on website https://www.uscis.gov/i-864.  There is more that "should be included by a sponsor.

Yes, an I-864 has supporting documentation.

Every sponsor needs to provide at least a copy or transcript of the most recent year's tax return. The other 2 years are optional.

They must provide documentation of any current income or assets being claimed. For example, pay stubs and/or an employment letter.

For a joint sponsor, they must provide evidence of being a USC or LPR (like a copy of a US birth certificate, US passport bio page, green card, etc.).

They may or may not want evidence of the joint sponsor being domiciled in the US.
